4 medium-sized russet potatoes, peeled

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg

1/4 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

1/4 teaspoon cayenne pepper (optional, for a kick)

1/4 cup vegetable oil (for frying)

Prep the Potatoes: Grate the peeled potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel, twist the towel, and squeeze out as much moisture as possible. This will help achieve that crispy texture.

    Mix Ingredients: In a large mixing bowl, combine the grated potatoes, chopped onion, minced garlic, egg, flour, baking powder, salt, black pepper, paprika, and cayenne pepper. Stir the mixture well until all ingredients are evenly distributed.

      Form Patties: Heat a large skillet or frying pan over medium heat and add the vegetable oil. Once hot, take a handful of the potato mixture and shape it into a patty about 1/2 inch thick. Carefully place the patty in the skillet. Repeat the process, cooking 3-4 patties at a time without overcrowding the pan.

        Fry the Patties: Fry the patties for about 4-5 minutes on one side or until golden brown and crispy. Carefully flip the patties using a spatula and cook for an additional 4-5 minutes on the other side until they are golden and cooked through.

          Drain and Serve: Once cooked, transfer the patties to a plate lined with paper towels to absorb excess oil. Continue frying the remaining patties. Serve hot, optionally with sour cream or your favorite dipping sauce.
