Ingredients

1 pound fresh green beans, trimmed

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably panko for extra crunch)

1 tablespoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs, beaten

2 tablespoons olive oil (plus more for drizzling)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking and ensure even crisping.

Trim the Beans: Rinse the green beans under cold water, trim the ends, and pat them dry with a kitchen towel.

Create the Coating: In a medium bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until all the dry ingredients are evenly blended.

Prepare the Egg Wash: In another bowl, beat the eggs and add the olive oil to the mixture, whisking until fully combined.

Coat the Green Beans: Dip each green bean in the egg wash, allowing excess to drip off. Then, roll it in the breadcrumb mixture, ensuring each bean is well-coated. Set the coated beans aside on a plate.

Arrange on Baking Sheet: Spread the coated green beans on the prepared baking sheet in a single layer, making sure they don't touch to allow for even roasting. Drizzle lightly with olive oil.

Roast the Green Beans: Bake in the preheated oven for 15-20 minutes, or until the coating is golden brown and crispy. Flip the green beans halfway through the cooking time for even crisping.

Serve: Remove from the oven and let them cool for a minute. Transfer to a serving platter and garnish with freshly chopped parsley. Serve with your favorite dipping sauce if desired (like ranch or marinara).
