Garlic Parmesan Chicken and Potatoes

4 bone-in, skin-on chicken thighs

1 lb baby potatoes, halved

5 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/4 cup olive oil

1 tbsp fresh rosemary, chopped (or 1 tsp dried)

1 tbsp fresh thyme, chopped (or 1 tsp dried)

Salt and pepper, to taste

Optional: Fresh parsley, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: In a mixing bowl, combine olive oil, minced garlic, rosemary, thyme, salt, pepper, and half of the grated Parmesan cheese. Stir until well mixed. Add the chicken thighs to the bowl and toss to coat them thoroughly with the marinade. Let it marinate for at least 15 minutes (or up to 1 hour in the fridge for more flavor).

      Prepare the Potatoes: While the chicken is marinating, take the halved baby potatoes and place them in a separate bowl. Drizzle with olive oil, season with salt and pepper, and toss until they are evenly coated.

        Arrange in Baking Dish: In a large baking dish, arrange the marinated chicken thighs skin-side up and surround them with the halved potatoes.
