1 teaspoon dried rosemary

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare Sweet Potatoes: In a large bowl, combine the cubed sweet potatoes with olive oil, minced garlic, dried rosemary, dried thyme, paprika, salt, and pepper. Toss well to ensure all the sweet potatoes are evenly coated with the herb mixture.

Arrange for Roasting: Spread the sweet potatoes out in a single layer on a large baking sheet. Make sure they are not overcrowded for even roasting.

Roast in the Oven: Place the baking sheet in the preheated oven and roast for about 25-30 minutes, turning the sweet potatoes halfway through cooking for even browning. They should be golden brown and tender when finished.

Garnish and Serve: Remove from the oven and let them cool for a few minutes. Transfer to a serving platter, sprinkle with fresh parsley, and serve warm.
