Ingredients

4 tilapia fillets

4 tablespoons unsalted butter

4 cloves garlic, minced

5 cups fresh spinach

1 teaspoon lemon zest

Juice of 1 lemon

Salt and pepper to taste

1 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Ingredients: Start by patting the tilapia fillets dry with paper towels. Season both sides with salt and pepper to taste. Set aside.

Melt the Butter: In a large skillet, melt 2 tablespoons of the butter over medium heat until bubbly.

Cook the Garlic: Add the minced garlic to the skillet and sauté for about 30 seconds, just until fragrant. Be careful not to let the garlic burn.

Cook the Tilapia: Place the seasoned tilapia fillets in the skillet and cook for about 3-4 minutes on one side, until golden brown. Flip the fillets carefully and cook for another 2-3 minutes on the other side, until they are cooked through and easily flake apart with a fork. Remove the tilapia from the skillet and set aside on a plate.

Sauté the Spinach: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the fresh spinach. Sauté for 2-3 minutes until the spinach is wilted.

Add Flavor: Stir in the lemon zest, lemon juice, and red pepper flakes (if using) to the spinach. Cook for an additional minute, allowing the flavors to combine.

Combine and Serve: Carefully return the tilapia fillets back to the skillet with the spinach. Toss gently to combine, ensuring the fish is coated with the garlic-butter sauce.

Garnish and Plate: Remove from heat, garnish with fresh chopped parsley, and serve immediately with a side of rice or crusty bread to soak up the delicious garlic butter sauce.
