Garlic Butter Steak Tips with Cheesy Rigatoni

For the Garlic Butter Steak Tips:

1.5 lbs sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

1 tablespoon olive oil

For the Cheesy Rigatoni:

12 oz rigatoni pasta

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups heavy cream

2 tablespoons butter

1 teaspoon garlic powder

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Rigatoni:

    Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente, about 10-12 minutes. Drain and set aside.

      Prepare the Garlic Butter for Steak:

        In a large skillet over medium heat, add olive oil. Once heated, add the steak tips and season with salt and pepper. Cook for about 4-5 minutes until browned on all sides, stirring occasionally. Remove the steak tips and set aside.

          Make the Garlic Butter:

            In the same skillet, reduce the heat to low. Add the butter, minced garlic, rosemary, and thyme. Stir until the butter is melted and fragrant, about 1 minute.

              Combine Steak with Garlic Butter:

                Return the cooked steak tips to the skillet, tossing them in the garlic butter for an even coating. Cook for an additional 2-3 minutes until the steak is coated and heated through. Remove from heat and keep warm.

                  Prepare the Cheesy Rigatoni:

                    In a separate pot, melt 2 tablespoons of butter over medium heat. Add the heavy cream, garlic powder, and black pepper. Stir occasionally until warmed through. Gradually add in the mozzarella and Parmesan cheese, stirring continuously until melted and smooth.

                      Combine Rigatoni and Cheese Sauce:

                        Add the drained rigatoni to the cheese sauce, tossing to coat evenly. If the sauce is too thick, add a splash of reserved pasta water to reach desired consistency.

                          Serve:

                            Plate the cheesy rigatoni and top with a generous portion of the garlic butter steak tips. Garnish with chopped parsley and a sprinkle of extra Parmesan if desired. Enjoy!
