Ingredients

12 oz rigatoni pasta

1 lb sirloin steak, trimmed and cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup beef broth

1 tablespoon Worcestershire sauce

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Rigatoni: Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Prepare the Steak: Season the sirloin pieces with salt and pepper. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once hot, add the steak pieces. Sear them for about 3-4 minutes until they are browned on all sides but still tender. Remove the steak from the pan and set aside.

Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes, until fragrant (be cautious not to burn the garlic).

Combine Ingredients: Stir in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes, then add the heavy cream. Gradually whisk in the grated Parmesan cheese until melted and smooth.

Combine Pasta and Steak: Return the seared steak to the skillet and toss to coat it in the sauce. Add the cooked rigatoni along with a splash of the reserved pasta water, stirring to combine everything thoroughly. If the sauce is too thick, add more reserved pasta water until you reach the desired consistency. Adjust seasoning with salt and pepper if needed.

Serve: Divide the Garlic Butter Steak Parmesan Rigatoni among serving plates. Garnish with chopped fresh parsley and an extra sprinkle of Parmesan cheese if desired.
