1 lb (450g) sirloin steak, cut into 1-inch cubes

3 tablespoons unsalted butter

4 cloves of garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon Worcestershire sauce

Salt and black pepper, to taste

1 tablespoon olive oil

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Lemon wedges for serving

Prepare the Steak: Begin by patting the steak cubes dry with paper towels. This will help achieve a nice sear. Season generously with salt and black pepper.

    Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.

      Sear the Steak: Add the steak bites in batches, ensuring not to overcrowd the pan. Sear them for about 2-3 minutes on each side until they develop a golden-brown crust and are cooked to your desired doneness. For medium-rare, aim for an internal temperature of 130°F (54°C). Remove the steak bites from the skillet and set aside.

        Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and thyme leaves. Sauté for about 30 seconds until fragrant, but be careful not to burn the garlic.

          Combine and Finish: Return the steak bites to the skillet. Drizzle with Worcestershire sauce and toss to coat the steak bites in the garlic butter sauce. Cook for an additional minute to heat through.

            Serve: Transfer the steak bites to a serving platter. Garnish with fresh parsley, and serve with lemon wedges on the side for a fresh burst of flavor.
