4 medium zucchinis, spiralized into noodles

4 tablespoons unsalted butter

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional for heat)

1 lemon (juice and zest)

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

1/4 cup grated Parmesan cheese (optional)

Prepare the Zucchini Noodles: Spiralize the zucchinis into noodles and set them aside. If you prefer, lightly salt the noodles and let them sit for 10 minutes to draw out excess moisture, then pat dry with a paper towel.

    Cook the Shrimp: In a large skillet over medium-high heat, add a splash of olive oil. Once hot, add the shrimp in a single layer. Season with salt and pepper.
