8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

4 cloves garlic, minced

1/2 tsp red pepper flakes (adjust to taste)

1/4 cup dry white wine (optional)

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Zest and juice of 1 lemon

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add spaghetti or linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Create the Sauce: In the same skillet, pour in the white wine (if using) and cook for about 2 minutes to reduce slightly. Stir in the remaining 2 tablespoons of butter, cherry tomatoes, lemon zest, and lemon juice. Cook for an additional 3-4 minutes until the tomatoes are softened.

        Combine: Return the cooked shrimp to the skillet along with the drained pasta. Toss everything together gently, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.

          Garnish and Serve: Stir in freshly chopped parsley and adjust seasoning as needed. Serve immediately, topped with grated Parmesan cheese if desired.
