1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional)

3 cups fresh spinach, roughly chopped

Salt and pepper to taste

4 slices of your favorite bread (sourdough or whole grain recommended)

1 tablespoon lemon juice

Fresh parsley, for garnish

Grated Parmesan cheese (optional)

Instructions
 

Prepare the Chickpeas: In a medium bowl, lightly mash the chickpeas with a fork, leaving some whole for texture. Set aside.

    Make the Garlic Butter: In a skillet over medium heat, melt the unsalted butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

      Add Seasonings: To the skillet, add the smoked paprika and red pepper flakes (if using). Stir for another 30 seconds to release the flavors.

        Incorporate Spinach: Add the chopped spinach to the skillet and sauté for 2-3 minutes until wilted. Stir in the mashed chickpeas, season with salt and pepper, and add the lemon juice. Mix well and cook for another 2-3 minutes to heat through.

          Toast the Bread: While the chickpea and spinach mix is cooking, toast the bread slices to your desired crispness, either in a toaster or on a grill pan.
