Garlic Beef Pasta

12 oz (340g) spaghetti or fettuccine

1 lb (450g) beef sirloin, thinly sliced

4 tablespoons olive oil, divided

6 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup beef broth

½ cup heavy cream

1 cup fresh spinach, roughly chopped

½ cup grated Parmesan cheese, plus extra for serving

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add spaghetti or fettuccine and cook according to package directions until al dente. Drain and reserve about ½ cup of the pasta water. Set aside.

    Sauté the Beef: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the thinly sliced beef and season with salt and pepper. Sear the beef for about 2-3 minutes until browned but not fully cooked. Remove from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and red pepper flakes, cooking for another minute until fragrant.

        Add Tomatoes and Broth: Stir in the halved cherry tomatoes and cook for 2-3 minutes until they start to soften. Pour in the beef broth and bring to a simmer.

          Combine Ingredients: Add the seared beef back into the skillet. Mix well and let it simmer for about 5 minutes to allow the flavors to meld. If the sauce gets too thick, add a little reserved pasta water to loosen it.

            Finish the Sauce: Stir in the heavy cream and fresh spinach, allowing the spinach to wilt for about 2 minutes. Mix in the grated Parmesan cheese, stirring until it melts into the sauce. Adjust seasoning with salt and pepper to taste.

              Toss with Pasta: Add the cooked pasta to the skillet and toss everything together, ensuring the pasta is well-coated with the creamy sauce. If needed, add more pasta water for desired consistency.

                Serve: Plate the Garlic Beef Pasta into bowls, garnishing with fresh basil leaves and extra Parmesan cheese. Enjoy!
