Ingredients

1 cup diced fresh pineapple

1 cup strawberries, hulled and quartered

1 cup blueberries

1 medium ripe banana, sliced

1 orange, segmented

1 ripe kiwi, peeled and sliced

1 cup seedless grapes, halved

1 tablespoon fresh mint leaves, finely chopped

For the Honey Lime Dressing:

3 tablespoons honey

2 tablespoons fresh lime juice

Zest of 1 lime

A pinch of sea salt

Instructions

Prep the Fruits: Start by washing all the fruits thoroughly. Dice the pineapple, hull and quarter the strawberries, slice the banana and kiwi, segment the orange, and halve the grapes. Place all the prepared fruits into a large mixing bowl.

Make the Dressing: In a small bowl, whisk together the honey, fresh lime juice, lime zest, and a pinch of sea salt until well combined. Adjust the sweetness and acidity according to your preference by adding more honey or lime juice if desired.

Combine and Toss: Pour the honey lime dressing over the mixed fruits. Gently toss the fruits until they are evenly coated with the dressing. Be careful not to mash the softer fruits, such as bananas and strawberries.

Garnish: Add the finely chopped mint leaves to the fruit salad and give it another gentle toss for an extra burst of flavor.

Chill and Serve: For the best flavor, let the fruit salad sit in the refrigerator for about 15 minutes before serving. This allows the flavors to meld beautifully. Serve in individual bowls or on a large platter, garnished with additional mint leaves if desired.
