Ingredients

2 large chicken breasts, cubed

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup diced fresh pineapple

1 cup blueberries

1 cup diced strawberries

1/2 cup mozzarella cheese, shredded

1/4 cup fresh basil, chopped

1 tablespoon balsamic glaze (optional, for drizzling)

Juice of 1 lime

Instructions

Prep the Chicken: In a medium bowl, combine the cubed chicken with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly coated and let marinate for about 15 minutes.

Cook the Chicken: Heat a large skillet over medium heat. Once hot, add the marinated chicken and cook for about 7-10 minutes, stirring occasionally, until the chicken is thoroughly cooked and golden brown. Ensure it's cooked through and no longer pink in the center.

Add the Fruits: Once the chicken is cooked, reduce the heat to low. Add the cherry tomatoes, pineapple, blueberries, and strawberries to the skillet. Stir well to combine everything and cook for another 3-5 minutes, until the fruits are slightly softened.

Melt the Cheese: Sprinkle the mozzarella cheese evenly over the chicken and fruit mixture. Cover the skillet with a lid and let it cook for 2-3 minutes until the cheese is melted and bubbly.

Garnish and Serve: Remove the skillet from the heat. Squeeze fresh lime juice over the top, sprinkle with chopped basil, and drizzle with balsamic glaze if desired. Serve warm directly from the skillet, either as a main dish or over a bed of rice or quinoa for a complete meal.
