Frozen Yogurt Strawberry Marshmallow Pops

Ingredients
  

2 cups plain Greek yogurt

1 cup fresh strawberries, hulled and sliced

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 cup mini marshmallows

1/2 cup strawberry purée (made from blending fresh strawberries)

1/2 cup melted dark chocolate or chocolate coating (optional for drizzle)

Instructions
 

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, granulated sugar, and vanilla extract. Mix until the sugar is fully dissolved and the mixture is smooth.

    Add Strawberries: Gently fold in the sliced strawberries and mini marshmallows into the yogurt mixture, ensuring they're evenly distributed.

      Layering in Molds: If you'd like a marbled effect, spoon a layer of the yogurt mixture into each popsicle mold, then drizzle a layer of strawberry purée on top. Use a toothpick to swirl the purée gently through the yogurt. Repeat this process until the molds are filled, alternating between the yogurt mixture and the strawberry purée.

        Insert Sticks: Place the gelato sticks into the center of each mold. Make sure they reach the bottom but don't touch the base of the mold.

          Freeze: Place the molds in the freezer for at least 6 hours or until completely frozen.

            Unmold the Pops: To remove the popsicles, run warm water over the outside of the molds for a few seconds to help loosen them. Carefully pull the pops out.

              Optional Chocolate Drizzle: If desired, dip the end of each pop into melted dark chocolate or drizzle some over the top using a fork. Let the chocolate set for a couple of minutes.

                Serve and Enjoy: Place the pops on a parchment-lined tray and return them to the freezer until the chocolate hardens. Serve them chilled and enjoy this refreshing treat!
