Ingredients

2 cups plain Greek yogurt

1 cup whipped cream (store-bought or homemade)

1/2 cup sweetened condensed milk

1 tsp vanilla extract

1/2 cup crushed graham crackers

1/2 cup mini chocolate chips

1/2 cup mini marshmallows

1/4 cup chocolate syrup (for drizzling)

Optional: additional crushed graham crackers and mini marshmallows for topping

Instructions

Prepare the Yogurt Mix: In a large mixing bowl, combine the Greek yogurt, whipped cream, sweetened condensed milk, and vanilla extract. Gently fold the mixture until smooth and well blended.

Mix in the Goodies: Add the crushed graham crackers, mini chocolate chips, and mini marshmallows to the yogurt mixture. Stir until all ingredients are evenly distributed.

Mold the Mixture: Spoon the yogurt mixture into silicone coin-shaped molds, filling each mold about 3/4 full to allow for expansion as they freeze. If you don’t have coin molds, you can use a shallow baking dish lined with parchment paper.

Freeze: Cover the molds with plastic wrap or a lid and place them in the freezer. Allow them to freeze for at least 4-6 hours or until completely solid.

Unmold and Serve: Once frozen, carefully remove the ice cream coins from the molds. If using a baking dish, cut the mixture into coin-sized squares.

Drizzle and Garnish: Place the ice cream coins on a serving plate or platter. Drizzle with chocolate syrup and sprinkle with additional crushed graham crackers and mini marshmallows for garnish.

Enjoy: Serve immediately for a delightful treat, or return the coins to the freezer until you’re ready to indulge!
