1 tablespoon honey (or agave syrup for a vegan option)

1/2 cup mixed berries (strawberries, blueberries, raspberries)

1/4 cup mini chocolate chips (optional)

Prepare the Oat Mixture: In a mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, cinnamon, and salt. Stir until well mixed. Allow the mixture to sit for about 10 minutes, allowing the oats to absorb the liquid and soften.

    Form Oatmeal Cookies: Preheat your oven to 350°F (175°C). On a baking sheet lined with parchment paper, scoop tablespoon-sized balls of the oatmeal mixture and flatten them slightly to form cookie shapes. You should have around 12-16 cookies. Bake for 15-20 minutes, or until the edges are golden. Let them cool completely on a wire rack.

      Prepare the Yogurt Filling: In a bowl, mix the Greek yogurt with honey (or agave syrup) until smooth. If you want to add flavor and texture, gently fold in the mixed berries and mini chocolate chips.
