1 cup almond flour

1/4 cup maple syrup

1/4 cup almond butter (or peanut butter)

1 teaspoon vanilla extract

1/2 teaspoon salt

1/3 cup vegan chocolate chips

For the Matcha Yogurt Layer:

2 cups Greek yogurt (or dairy-free yogurt)

3 tablespoons honey (or agave syrup for vegan)

2 teaspoons matcha powder

1 teaspoon vanilla extract

A pinch of salt

For Topping:

1/4 cup shredded coconut (unsweetened)

2 tablespoons crushed pistachios (optional)

Instructions
 

Prepare the Cookie Dough Layer:

    - In a medium mixing bowl, combine the almond flour, coconut flour, and salt. Mix well.

      - Add the maple syrup, almond butter, and vanilla extract. Stir until a dough forms.

        - Fold in the vegan chocolate chips until evenly distributed.

          - Line a baking dish (about 8x8 inches) with parchment paper, leaving some overhang for easy removal. Press the cookie dough mixture evenly into the bottom of the dish to create a solid layer.

            Make the Matcha Yogurt Layer:

              - In a separate mixing bowl, whisk together the Greek yogurt, honey, matcha powder, vanilla extract, and a pinch of salt until smooth and well combined.

                - Gently spread the matcha yogurt mixture over the cookie dough layer in the baking dish, smoothing it out with a spatula.

                  Add Toppings:

                    - Sprinkle the shredded coconut evenly over the matcha yogurt layer, followed by the crushed pistachios if using.

                      Freeze the Bars:

                        - Cover the baking dish with plastic wrap or foil and place it in the freezer for at least 4 hours or until completely firm.

                          Cut and Serve:
