2 cups Greek yogurt (plain or vanilla)

1/2 cup maple syrup or honey

Zest of 2 lemons

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1/2 cup almond flour

1/4 cup chopped almonds (you can also use slivered)

1/2 cup white chocolate chips (optional, for coating)

A pinch of salt

Extra chopped almonds for topping

Prepare the Yogurt Base: In a mixing bowl, combine the Greek yogurt, maple syrup (or honey), lemon zest, lemon juice, vanilla extract, and a pinch of salt. Mix until smooth and well-blended.

    Incorporate Almonds: Fold in the almond flour and chopped almonds into the yogurt mixture. The almond flour helps in binding the truffles, while the chopped almonds will give a nice crunch.

      Chill the Mixture: Cover the bowl with plastic wrap and place it in the freezer for about 1 to 2 hours, just until it’s firm but not completely frozen.

        Form the Truffles: Once the mixture is firm, take it out of the freezer. Using a small scoop or your hands, take about a tablespoon of the mixture and roll it into a ball. Place the truffles on a baking sheet lined with parchment paper.

          Coat in Chocolate (Optional): If you desire a chocolate coating, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Dip each truffle into the melted white chocolate, making sure it's fully coated, and then place it back onto the parchment paper.

            Add Toppings: Before the chocolate hardens, sprinkle some extra chopped almonds on top of each truffle for added texture and flavor.

              Freeze to Set: Place the baking sheet with the truffles back into the freezer for another 30 minutes to set.
