1/3 cup honey

2 large eggs

1 teaspoon vanilla extract

1 medium apple, finely chopped (choose your favorite variety)

1/4 cup walnuts or pecans, chopped (optional)

1/2 cup oats (for topping)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with muffin liners or grease with non-stick spray.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt. Set aside.

      Mix Wet Ingredients: In another bowl, whisk together the apple sauce, Greek yogurt, honey, eggs, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture into the dry ingredients, stirring just until combined. Be careful not to overmix. Fold in the finely chopped apple and nuts if using.
