2 cups Greek yogurt (plain or vanilla)

1 cup dried figs, chopped

1/4 cup honey (plus extra for drizzling)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup chopped nuts (e.g., almonds, walnuts)

1/4 cup unsweetened shredded coconut (optional)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey, vanilla extract, and salt. Stir until smooth and well blended.

    Add Figs and Nuts: Fold in the chopped dried figs and chopped nuts, ensuring they are evenly distributed throughout the yogurt mixture. If using shredded coconut, add it in at this stage as well.

      Line the Pan: Line an 8x8-inch square baking dish with parchment paper, leaving some overhang on the sides for easy removal.

        Pour & Smooth: Pour the yogurt mixture into the prepared baking dish. Use a spatula to smooth the top evenly.

          Freeze: Cover the dish with plastic wrap and place it in the freezer. Freeze for at least 4-6 hours, or until fully set.

            Cut Into Bars: Once frozen, remove the yogurt block from the dish using the parchment paper overhang. Place it on a cutting board and cut it into bars of your desired size.

              Serve: Drizzle with additional honey before serving for an extra touch of sweetness. Enjoy immediately, or store leftover bars in an airtight container in the freezer for up to 2 weeks.
