2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1/2 cup almond flour

1/2 cup dried cranberries, coarsely chopped

1/2 cup white chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Pinch of salt

1 tablespoon lemon juice

Fresh cranberries and mint for garnish (optional)

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice. Stir until smooth and uniform.

    Mix Dry Ingredients: In another bowl, mix the rolled oats, almond flour, and a pinch of salt. If you're adding nuts, white chocolate chips, or dried cranberries, fold them into this dry mixture.

      Combine Mixtures: Gradually add the dry ingredients to the yogurt mixture and stir until everything is well combined. The mixture should be thick but pliable.

        Line the Pan: Line an 8x8 inch (or similar size) baking dish with parchment paper, leaving an overhang on the sides for easy removal later.

          Spread the Mixture: Pour the yogurt and oat mixture into the lined baking dish and use a spatula to evenly spread it out. Press down lightly to ensure an even surface.
