Ingredients

1 cup rolled oats

½ cup almond flour (or all-purpose flour)

¼ cup maple syrup (or honey)

½ cup natural peanut butter (or any nut/seed butter)

¼ teaspoon sea salt

½ teaspoon vanilla extract

½ cup mini chocolate chips (or dark chocolate chunks)

½ cup Greek yogurt (plain or vanilla-flavored)

Optional toppings: shredded coconut, crushed nuts, or more chocolate chips

Instructions

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, and sea salt. Stir well to ensure they are evenly mixed.

Add the Wet Ingredients: In another bowl, whisk together the maple syrup, peanut butter, and vanilla extract until smooth and well combined.

Combine Ingredients: Pour the wet mixture into the dry ingredients. Stir with a spatula or wooden spoon until thoroughly combined. The dough should be sticky.

Fold in Chocolate Chips: Gently fold in the mini chocolate chips until they are evenly distributed throughout the mixture.

Form the Bites: Using your hands, scoop about a tablespoon of the mixture and roll it into a ball. Place the balls on a parchment-lined baking sheet. Repeat until all the dough is used up.

Coat in Yogurt: In a separate bowl, take the Greek yogurt and dip each oat bite into the yogurt, ensuring they are fully coated. You can use a fork to lift them out gently afterward.

Freeze the Bites: Place the yogurt-coated bites back onto the parchment-lined baking sheet. Put the baking sheet in the freezer and allow the bites to freeze for at least 2 hours or until firm.

Store and Serve: Once frozen, transfer the bites to an airtight container and store them in the freezer. Enjoy these frozen delights straight from the freezer for a sweet treat!
