2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 tsp vanilla extract

1 cup rolled oats

1/2 cup almond flour

2 tsp ground cinnamon

1/4 cup melted coconut oil

1/4 tsp salt

1 cup chopped pecans (optional)

1/4 cup brown sugar (for topping)

1 tbsp cinnamon (for topping)

Instructions
 

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until smooth and well mixed.

    Mix Dry Ingredients: In a separate bowl, combine the rolled oats, almond flour, 2 teaspoons of ground cinnamon, melted coconut oil, and salt. If you’re adding pecans, toss them in now as well.

      Combine Mixtures: Gradually fold the dry mixture into the yogurt mixture until thoroughly combined. The result should be a thick batter.

        Prepare the Baking Dish: Line an 8x8-inch baking dish with parchment paper, allowing some overhang for easy removal later. Pour the yogurt mixture into the dish and spread it evenly with a spatula.

          Create the Cinnamon Sugar Topping: In a small bowl, mix brown sugar with 1 tablespoon of cinnamon. Sprinkle this mixture evenly over the top of the yogurt bars.

            Freeze: Cover the dish with plastic wrap or a lid and place it in the freezer for at least 4 hours, or until solid.

              Cut into Bars: Once fully frozen, remove the dish from the freezer. Using the parchment overhang, lift the frozen yogurt block out of the dish. Cut into squares or bars of your desired size.

                Serve: Enjoy immediately or keep the bars stored in an airtight container in the freezer. They’re perfect for a quick treat or a refreshing dessert!
