Ingredients

For the Churro Cups:

1 cup all-purpose flour

1/2 cup water

1/4 cup unsalted butter

1 tablespoon sugar

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

Oil for frying

For the Cinnamon Sugar:

1/4 cup sugar

1 teaspoon ground cinnamon

For the Frozen Yogurt Filling:

2 cups vanilla or cinnamon-flavored yogurt

1/4 cup honey or maple syrup (optional, adjust for sweetness)

1 cup mixed berries (fresh or frozen)

1/2 cup granola (for crunch)

Instructions

Prepare the Churro Batter:

In a medium-sized saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Once it boils, remove from heat and stir in the flour and vanilla extract until well combined.

      Shape and Fry the Churros:

Heat oil in a deep saucepan or fryer to 350°F (175°C). Using a piping bag fitted with a star tip, pipe small circles (about 2-3 inches in diameter) of the churro dough into the hot oil. Fry until golden brown on both sides, approximately 2-3 minutes. Use a slotted spoon to transfer the churros to a paper towel-lined plate.

          Coat in Cinnamon Sugar:

In a small bowl, mix the sugar and ground cinnamon. While the churros are still warm, toss them in the cinnamon sugar mixture until evenly coated.

              Assemble the Frozen Yogurt Cups:

In a mixing bowl, combine the yogurt and honey or maple syrup (if using), then fold in mixed berries.

                  Create the Crunch Cups:

To assemble, take your fried churro cups and fill them with the yogurt mixture. Top with a sprinkle of granola for added crunch.

                      Chill and Serve:

Place the filled churro cups in the freezer for about 30 minutes to firm up. Serve immediately after removing from the freezer for a delicious treat!
