Frozen Yogurt Biscoff Cookie Balls

1 cup plain Greek yogurt

1/2 cup Biscoff cookie butter

1/4 cup powdered sugar

1/2 teaspoon vanilla extract

1 cup crumbled Biscoff cookies (plus extra for rolling)

1/2 cup dark chocolate chips

1 tablespoon coconut oil (for melting chocolate)

Mix the Base: In a large mixing bowl, combine the Greek yogurt, Biscoff cookie butter, powdered sugar, and vanilla extract. Use a whisk to mix until smooth and well-combined.

    Add Crunch: Gently fold in the crumbled Biscoff cookies until evenly distributed throughout the yogurt mixture.

      Form Balls: Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands. Place each ball on a parchment-lined baking sheet.

        Freeze: Once all the balls are formed, place the baking sheet in the freezer for about 1-2 hours, or until they are firm.

          Prepare the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until fully melted and smooth.

            Coat the Balls: Take the frozen yogurt balls out of the freezer. Using a fork, dip each ball into the melted chocolate, allowing any excess chocolate to drip off before placing it back on the baking sheet. For added crunch, roll the chocolate-coated ball in additional crumbled Biscoff cookies.

              Final Freeze: Once all the balls are coated, return the baking sheet to the freezer for an additional 30 minutes to set the chocolate.
