2 cups fresh strawberries, hulled and chopped

1 cup plain or vanilla Greek yogurt

1/4 cup honey or maple syrup (adjust to taste)

1 tablespoon lemon juice

1 teaspoon vanilla extract

A pinch of salt

Optional: Fresh mint leaves for garnish

Instructions
 

Prepare the Strawberries: Place the hulled and chopped strawberries in a blender or food processor. Blend until smooth, but leave a few small chunks for texture if desired.

    Mix Ingredients: In a large mixing bowl, combine the strawberry puree, Greek yogurt, honey (or maple syrup), lemon juice, vanilla extract, and a pinch of salt. Mix until all ingredients are well combined and the mixture is smooth.

      Taste and Adjust: Give the mixture a taste and adjust the sweetness if necessary by adding more honey or maple syrup.

        Pour into Molds: Carefully pour the strawberry yogurt mixture into your popsicle molds, filling them about 3/4 of the way full to allow for expansion during freezing.

          Insert Sticks: If your molds come with sticks, insert them now. If not, freeze for about 1 hour until slightly firm, then insert wooden sticks.

            Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

              Unmold Pops: To remove the pops, run warm water over the outside of the molds for a few seconds. This should help release the pops easily.
