1/4 cup coconut oil, melted

2 tablespoons peanut butter or almond butter (optional for added richness)

For the Creamy Layer:

1 cup Greek yogurt or dairy-free yogurt

1 teaspoon vanilla extract

1 tablespoon honey or agave syrup (optional, depending on the sweetness of yogurt)

Instructions
 

Prepare the Strawberry Layer:

    - In a medium bowl, combine the strawberries, honey (or maple syrup), and lemon juice. Toss well to coat the strawberries evenly.

      - If using fresh strawberries, let the mixture sit for about 10 minutes to macerate and release juices. For frozen strawberries, thaw slightly before mixing.

        Make the Crunch Layer:

          - In another bowl, combine the granola, melted coconut oil, and peanut butter (if using). Mix until the granola is well coated.

            - Spread the mixture evenly on a baking sheet lined with parchment paper and bake at 350°F (175°C) for 8-10 minutes or until golden brown. Let it cool to room temperature.
