Ingredients

2 cups plain Greek yogurt

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup fresh raspberries (or frozen, thawed)

1/4 cup dark chocolate chips (optional)

1/4 cup chopped nuts (such as almonds or pistachios) (optional)

Pinch of sea salt

Instructions

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Stir until the mixture is smooth and well-blended.

Line the Baking Dish: Take a 9x13 inch baking dish or a rimmed baking sheet and line it with parchment paper, allowing some overhang for easy removal later.

Spread the Yogurt: Pour the yogurt mixture into the prepared dish. Using a spatula, evenly spread the yogurt to about 1/4-inch thickness.

Add the Raspberries: Evenly distribute the fresh raspberries over the yogurt layer, gently pressing them down so they are partially embedded in the yogurt.

Sprinkle Toppings: If using, sprinkle the dark chocolate chips and chopped nuts over the top, distributing them evenly across the surface.

Freeze: Place the baking dish in the freezer and freeze for at least 4 hours or until completely solid.

Slice and Serve: Once frozen, remove the yogurt bark from the dish using the parchment paper overhang. Place it on a cutting board and slice it into pieces of your desired size.

Storage: Store any leftovers in an airtight container in the freezer for up to 2 weeks.
