Ingredients

1 cup plain Greek yogurt

1/2 cup pumpkin puree (canned or fresh)

1/4 cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp salt

Optional: 1 tbsp chia seeds for added texture

Instructions

In a mixing bowl, combine the plain Greek yogurt and pumpkin puree. Stir until smooth and well-blended.

Add the honey or maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and salt to the mixture. Whisk together until all ingredients are fully incorporated and the mixture is creamy.

If using, add chia seeds to the mixture and stir until evenly distributed.

Spoon the mixture into silicone ice cube trays or mini muffin tins, filling each compartment about 3/4 full.

Gently tap the trays on the countertop to remove any air bubbles and ensure the mixture settles evenly in the compartments.

Place the trays in the freezer and allow the yogurt cubes to freeze for at least 4 hours or until solid.

Once frozen, remove the yogurt cubes from the trays. If they stick, run warm water over the back of the trays for a few seconds to help release them.

Store the frozen pumpkin spice yogurt cubes in an airtight container in the freezer. Enjoy them as a delicious, healthy snack or blend into smoothies!
