2 cups fresh or frozen pineapple chunks

1 cup plain Greek yogurt

1/4 cup honey or agave syrup (adjust to taste)

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

A pinch of salt

Optional: shredded coconut or chopped nuts for garnish

Blend the Pineapple: In a blender or food processor, combine the pineapple chunks and blend until smooth. If you want a chunkier texture, reserve a small portion of pineapple to fold in later.

    Mix the Base: In a large bowl, whisk together the Greek yogurt, honey (or agave syrup), lime juice, vanilla extract, and salt until well combined. Taste and adjust sweetness if necessary.

      Combine: Gently fold the blended pineapple into the yogurt mixture. If you reserved some chunks, add them in now for texture.

        Pour into Molds: Pour the mixture into popsicle molds, leaving a little space at the top as they may expand while freezing. If you like, sprinkle some shredded coconut or chopped nuts in the molds for added texture and taste.

          Insert Sticks: Place the popsicle sticks into the molds. Ensure they are centered and straight.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until completely solid.

              Unmold and Serve: To remove the pops from the molds, run warm water over the outside of the molds for a few seconds, then gently pull the pops out. Serve immediately and enjoy your tropical treat!
