2 cups fresh or frozen pineapple chunks

1 can (13.5 oz) coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1/4 cup shredded unsweetened coconut

1/4 teaspoon salt

1 teaspoon vanilla extract

1 tablespoon lime juice (for a zesty kick)

Instructions
 

Blend the Mixture: In a high-speed blender, combine the pineapple chunks, coconut milk, honey (or maple syrup), shredded coconut, salt, vanilla extract, and lime juice. Blend until the mixture is smooth and creamy, ensuring no pineapple chunks remain.

    Taste and Adjust: Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup, blending briefly to combine.

      Prepare the Mold: Pour the mixture into an 8x8-inch (or similar) square baking dish or silicone bar molds. Use a spatula to spread it evenly.

        Freeze: Cover the dish with plastic wrap or foil and place it in the freezer. Let it freeze for at least 4-6 hours, or until the bars are solidified.

          Cut and Serve: Once set, remove the bars from the dish. If using a baking dish, let it sit at room temperature for a few minutes for easier cutting. Cut into squares or bars. For silicone molds, gently push from the bottom to release.
