Ingredients

4 ripe peaches, peeled and sliced

1/2 cup granulated sugar (adjust to taste)

1 cup water

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract (optional)

A pinch of salt

Instructions

Prep the Peaches: Begin by peeling and slicing the peaches. Make sure they are ripe for the best flavor.

Make the Syrup: In a medium saucepan, combine the water and sugar over medium heat. Stir until the sugar has completely dissolved. Remove from heat and let the syrup cool to room temperature.

Blend the Ingredients: In a blender, add the sliced peaches, cooled syrup, lemon juice, vanilla extract (if using), and a pinch of salt. Blend until smooth and creamy.

Chill the Mixture: Pour the peach mixture into a shallow container and place it in the freezer. Let it freeze for about 4-6 hours, stirring every hour to break up any ice crystals.

Final Freeze: Once the mixture is firm yet still somewhat slushy (after about 6 hours), give it a final blend in the blender to achieve a smooth texture.

Serve: Scoop the sorbet into bowls or cones and enjoy! You can garnish with fresh mint leaves or more peach slices if desired.
