Frozen Peach Melba Popsicles

2 cups fresh or frozen peaches, peeled and chopped

1 cup raspberries (fresh or frozen)

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Prepare the Peach Puree: In a blender, combine the chopped peaches, honey (or maple syrup), lemon juice, and a pinch of salt. Blend until smooth. Taste and adjust sweetness if necessary. Set aside.

    Make the Raspberry Layer: In a small bowl, mash the raspberries with a fork (or blend lightly) until they are broken down but still have some texture. You may add a bit of honey or maple syrup if you prefer a sweeter raspberry layer.

      Combine Yogurt Mixture: In another bowl, mix the Greek yogurt with vanilla extract and a spoonful of honey (or maple syrup) for sweetness. Stir until combined.

        Layer the Popsicles: Take your popsicle molds and start by pouring a layer of peach puree into each mold, filling it about 1/3 full. Tap the mold on the counter to eliminate any air bubbles.

          Add the Raspberry Layer: Next, add a layer of the raspberry mixture on top of the peach puree, filling another 1/3 of the mold.

            Finish with Yogurt Layer: Top off the popsicle molds with the yogurt mixture, filling it to the top. Insert popsicle sticks and ensure they are centered.

              Freeze: Place the popsicle molds in the freezer for at least 4-6 hours or until completely frozen. For best results, leave them overnight.

                Unmold and Enjoy: To remove the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull on the sticks to release. Enjoy your homemade Frozen Peach Melba Popsicles on a hot day!
