2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust to taste)

Juice and zest of 1 large lemon

1 cup fresh raspberries (or frozen, thawed)

1/2 teaspoon vanilla extract

1/4 cup unsweetened shredded coconut (optional for garnish)

Pinch of sea salt

Instructions
 

In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and a pinch of sea salt. Mix well until smooth and creamy.

    Carefully fold in the fresh raspberries, gently breaking some of them to release their juice while keeping others whole for texture.

      Line a baking sheet with parchment paper. Using a tablespoon or a small cookie scoop, drop dollops of the yogurt mixture onto the prepared baking sheet, spreading them slightly to form coin shapes, about 1-2 inches in diameter.

        If desired, sprinkle a little shredded coconut on top of each yogurt coin for added flavor and texture.

          Place the baking sheet in the freezer and freeze for at least 3-4 hours or until the yogurt coins are completely solid.

            Once frozen, remove the yogurt coins from the baking sheet and transfer them to an airtight container. Store them in the freezer for up to 2 weeks.

              To serve, pop a few coins out of the container and enjoy them straight from the freezer for a refreshing treat!
