2 cups Greek yogurt (full-fat or low-fat)

1/2 cup fresh lemon juice (about 3-4 lemons)

Zest of 2 lemons

1/3 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 1/2 cups graham cracker crumbs (about 10-12 full sheets)

1/4 cup unsalted butter, melted

1/4 cup powdered sugar (optional, for sweetness)

Fresh berries (blueberries, raspberries, or strawberries) for topping

Instructions
 

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand. Press half of this mixture firmly into the bottom of a square or rectangular baking dish (8x8 inches or similar), creating an even layer. Set aside the remaining crumbs for later.

    Make the Lemon Yogurt Filling: In a large bowl, combine the Greek yogurt, fresh lemon juice, lemon zest, honey (or maple syrup), and vanilla extract. Mix well until the ingredients are smoothly blended together. Taste and adjust sweetness if necessary by adding a little more honey or powdered sugar.

      Layer the Yogurt: Spread half of the lemon yogurt mixture over the graham cracker crust in the baking dish. Use a spatula to level it out. Sprinkle a third of the reserved graham cracker crumb mixture evenly over the yogurt.

        Add More Yogurt: Spread the remaining lemon yogurt mixture over the crumbs, leveling it off again. Finally, sprinkle the remaining graham cracker crumbs on top to create the last layer.

          Freeze: Cover the dish with plastic wrap or aluminum foil and place it in the freezer. Freeze for at least 4-6 hours or until the yogurt is fully set and firm.

            Serve: To serve, remove the dish from the freezer about 10 minutes before slicing. Cut into squares and garnish with fresh berries on top. If desired, drizzle a bit more honey over the stacks before serving for an extra touch of sweetness.
