Frozen Greek Yogurt Berry Bombs

Ingredients
  

2 cups plain Greek yogurt

1 cup mixed berries (strawberries, blueberries, raspberries)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/4 cup granola (optional, for crunch)

Mini muffin tin or silicone molds

Parchment paper

Instructions
 

Prep the Berries: If using fresh berries, rinse them and pat them dry. If using frozen berries, allow them to thaw slightly for easier mixing.

    Mix Yogurt Base: In a large bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice. Stir well until fully blended. Adjust sweetness as desired.

      Incorporate Berries: Gently fold the mixed berries into the yogurt mixture, being careful not to mush them too much. If you prefer a marbled effect, you can reserve some berries to add on top of the molds later.

        Prepare Molds: Line the mini muffin tin or silicone molds with parchment paper if desired. This will help with easy removal later.

          Fill Molds: Spoon the yogurt and berry mixture into the molds, filling them about three-quarters full. If you reserved some berries, top each yogurt cup with a few berries for decoration.

            Add Granola (Optional): If you like a little crunch, sprinkle granola on top of each mold before freezing.

              Freeze: Place the filled molds in the freezer for at least 4 hours, or until completely frozen.

                Serve: Once the bombs are frozen solid, remove them from the molds by gently pulling on the parchment paper, or by pressing from the bottom if using silicone molds.

                  Enjoy: Serve immediately as a refreshing treat or store in an airtight container in the freezer for later enjoyment!
