1 cup coconut flour

1/2 cup shredded unsweetened coconut

1/4 cup honey or maple syrup

1/2 cup coconut yogurt (unsweetened)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

Optional toppings: Dark chocolate chips, coconut flakes, or chopped nuts

Instructions
 

Prepare the Dough: In a mixing bowl, combine the coconut flour, shredded coconut, baking soda, and salt. Stir the dry ingredients together until well-mixed.

    Mix Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), coconut yogurt, and vanilla extract until smooth.

      Combine Mixtures: Gradually add the wet ingredients to the dry ingredients. Mix with a spatula or your hands until a sticky dough forms. If the dough is too crumbly, add a teaspoon of coconut yogurt; if too wet, add a little more coconut flour.

        Shape the Cookies: Using your hands, take a tablespoon of dough and roll it into a ball. Press it down to form a disc shape (about 1/2 inch thick) and place it on a parchment-lined baking sheet. Repeat this step with the remaining dough.

          Add Toppings: If desired, sprinkle dark chocolate chips, coconut flakes, or chopped nuts on top of each cookie disc before freezing.

            Freeze the Cookies: Place the baking sheet in the freezer and freeze the cookies for at least 2 hours, until firm.
