Ingredients

2 cups coconut yogurt (unsweetened)

1/4 cup honey or maple syrup (for a vegan option)

1 teaspoon pure vanilla extract

1/4 teaspoon sea salt

1/2 cup almond butter

1/2 cup sliced almonds (lightly toasted, if desired)

1/4 cup shredded unsweetened coconut

1/4 cup cacao nibs or dark chocolate chips (optional)

Instructions

Prepare the Mixing Bowl: In a mixing bowl, combine the coconut yogurt, honey or maple syrup, vanilla extract, and sea salt. Stir until the mixture is smooth and well combined. This forms the creamy base of our disks.

Add Nutty Goodness: Gently fold in the almond butter into the coconut yogurt mixture until it's completely integrated. The almond butter adds a rich flavor and creaminess.

Incorporate Almonds and Coconut: Next, add the sliced almonds, shredded coconut, and cacao nibs or chocolate chips (if using). Stir gently to evenly distribute the mix-ins without breaking up the almonds too much.

Form the Disks: Line a baking sheet with parchment paper. Using a tablespoon or a cookie scoop, portion out the mixture onto the prepared baking sheet, forming small disks about 2 inches in diameter. Flatten them slightly with the back of the spoon to form even rounds.

Freeze: Place the baking sheet in the freezer and let the disks freeze for at least 4 hours, or until completely solid. This will help them set nicely for a delightful frozen treat!

Store: Once frozen, transfer the disks to an airtight container or zip-top bag. You can layer them with parchment paper to prevent sticking. Keep the disks stored in the freezer for up to two months.

Serve: When ready to enjoy, remove the desired amount of disks from the freezer and let them sit for a few minutes to soften slightly for easier biting. Enjoy these creamy, nutty, and refreshing treats straight from the freezer!
