Ingredients
  

1 cup Greek yogurt (plain or vanilla)

1/4 cup granulated sugar

1/2 teaspoon cinnamon

1/4 teaspoon vanilla extract

1/3 cup mini chocolate chips (optional)

1/2 cup graham cracker crumbs (for coating)

Additional cinnamon-sugar mixture (for dusting)

Prep the Yogurt Mix: In a medium mixing bowl, combine the Greek yogurt, granulated sugar, cinnamon, and vanilla extract. Stir well until the mixture is smooth and the sugar is dissolved.

    Add Chocolate Chips (Optional): If you’re including chocolate chips, fold them into the yogurt mixture gently so they are evenly distributed.

      Prepare the Molds: Line a mini muffin tin or silicone molds with paper liners if desired. This will help with easy removal later.

        Fill the Molds: Spoon the yogurt mixture into the molds, filling them about 3/4 full. Use a small spatula or your finger to smooth the tops.

          Freeze: Place the filled molds in the freezer for at least 3-4 hours, or until the yogurt bites are completely frozen.

            Prepare Coating: While the yogurt bites freeze, mix together the graham cracker crumbs and an additional 1 tablespoon of granulated sugar with 1/2 teaspoon of cinnamon in a shallow bowl. This will be the coating for the churro yogurt bites.

              Remove and Coat: Once the yogurt bites are frozen solid, carefully remove them from the molds. Roll each bite in the graham cracker mixture, ensuring they are fully coated.

                Chill Before Serving: Place the coated bites back in the freezer for about 15-20 minutes to firm up.
