1 cup grated carrots (about 2 medium carrots)

1 cup full-fat coconut yogurt (or dairy-free yogurt)

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1/2 teaspoon ground ginger (optional)

1/4 teaspoon ground cinnamon

A pinch of salt

1/4 cup unsweetened shredded coconut (for topping)

Instructions
 

Prepare the Carrots: Start by grating the carrots using a box grater or a food processor until fine. You should have about 1 cup of grated carrots.

    Mix the Yogurt Base: In a mixing bowl, combine the coconut yogurt, maple syrup (or honey), vanilla extract, ground ginger (if using), ground cinnamon, and a pinch of salt. Stir until you have a smooth and creamy mixture.

      Incorporate Carrots: Fold the grated carrots into the yogurt mixture, ensuring that the carrots are evenly distributed throughout the yogurt.

        Prepare the Ice Tray: Line a silicone muffin tray or a mini muffin tray with silicone or paper liners for easy removal.

          Fill the Mold: Spoon the carrot and yogurt mixture into each cup of the tray, filling them about 3/4 full.
