1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/4 cup granulated sugar

1/4 cup brown sugar, packed

1 teaspoon vanilla extract

1 large egg

1 cup rolled oats

1 cup mixed frozen berries (blueberries, raspberries, strawberries)

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup

1/2 teaspoon vanilla extract (for yogurt)

Optional: extra berries for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a small bowl, whisk together the flour, baking soda, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes). Add in the vanilla extract.

        Add Egg: Beat in the egg until fully incorporated.

          Combine Ingredients: Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the rolled oats and mixed frozen berries gently.

            Scoop the Dough: Using a cookie scoop or tablespoon, drop spoonfuls of the dough onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake Cookies: Bake in the preheated oven for 10-12 minutes or until the edges are golden and the centers are set. Allow them to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

                Prepare the Yogurt Filling: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, and the additional teaspoon of vanilla extract. Mix until smooth and creamy.
