Ingredients

For the Cookies:

2 ripe bananas, mashed

1 ½ cups rolled oats

½ tsp cinnamon

¼ cup almond butter (or any nut butter of your choice)

¼ cup honey or maple syrup

½ tsp vanilla extract

¼ tsp salt

Optional: ½ cup dark chocolate chips or nuts for added texture

For the Filling:

1 cup Greek yogurt (or dairy-free yogurt for a vegan option)

2 tbsp honey or maple syrup

½ tsp vanilla extract

Optional: 1 tbsp nut butter for creaminess

Instructions

Prepare the Cookies:

    - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

      - In a large mixing bowl, combine the mashed bananas, rolled oats, cinnamon, almond butter, honey (or maple syrup), vanilla extract, and salt. Mix until everything is well incorporated. If desired, fold in chocolate chips or nuts for extra texture.

        - Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of the spoon.

          Bake the Cookies:

            - Bake in the preheated oven for about 12-15 minutes or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

              Make the Filling:

                - In a small bowl, whisk together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth. If desired, stir in the nut butter for a creamier consistency.

                  Assemble the Sandwiches:

                    - Once the cookies have cooled, take one cookie and spread a generous amount of the yogurt filling on the flat side. Top with another cookie, flat side down, to create a sandwich. Repeat this process for all cookies.

                      Freeze and Enjoy:

                        - Place the assembled cookie sandwiches on a baking sheet and freeze for at least 1-2 hours or until firm. Once frozen, store them in an airtight container with layers separated by parchment paper in the freezer for up to a month.

                          Serve:

                            - When ready to enjoy, take out a sandwich, let it sit at room temperature for a minute or two, and then indulge in your delicious, healthy frozen treat!
