4 ripe bananas

1 cup mixed berries (fresh or frozen: strawberries, blueberries, raspberries)

1/2 cup creamy peanut butter or almond butter

1 cup rolled oats

1/2 cup granola (preferably honey or maple flavored)

2 tablespoons honey or maple syrup (optional, for added sweetness)

1 teaspoon cinnamon

A pinch of salt

Prepare the Bananas: Peel the ripe bananas and cut them into 1-inch thick slices. You can slice them either horizontally or vertically, depending on your preference for sandwich structure.

    Berry Mixture: In a small bowl, mash the mixed berries using a fork until they’re chunky but spreadable. If you’re using frozen berries, allow them to thaw for a few minutes before mashing.

      Nut Butter Assembly: Spread a generous tablespoon of peanut butter or almond butter onto one banana slice. Top it with a spoonful of the mashed berry mixture.

        Make the Sandwich: Place another banana slice on top to create a sandwich. Repeat this process until all banana slices are used.

          Crunchy Coating: In a separate bowl, mix the rolled oats, granola, cinnamon, and salt together. If you desire extra sweetness, drizzle the honey or maple syrup into the mixture and stir until evenly coated.

            Coat the Sandwiches: Take each banana berry sandwich and gently press it into the oat-granola mixture, ensuring that both sides are well coated.

              Freezing: Arrange the coated sandwiches on a parchment-lined baking sheet and place them in the freezer. Freeze for about 2 hours or until they are solid.

                Serving: Once frozen, remove the sandwiches from the baking sheet and place them in an airtight container or zip-top bag. They can be enjoyed straight from the freezer as a refreshing snack or dessert!
