Fresh Tomato Basil Frittata

6 large eggs

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

1/2 cup onion, finely chopped

1/2 cup bell pepper, diced (any color)

1/4 cup grated Parmesan cheese

1/4 cup heavy cream

2 tablespoons olive oil

Salt and pepper, to taste

Optional: red pepper flakes for a spicy kick

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In an oven-proof skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, seasoning with a pinch of salt and pepper. Sauté for about 5-7 minutes, or until the vegetables are softened and fragrant.

      Add Tomatoes & Basil: Stir in the halved cherry tomatoes and half of the chopped basil. Cook for an additional 2-3 minutes until the tomatoes start to soften slightly. Remove from heat.

        Prepare the Egg Mixture: In a large mixing bowl, whisk the eggs together with the heavy cream, grated Parmesan cheese, salt, pepper, and red pepper flakes (if using). Make sure the mixture is fully combined and frothy.

          Combine and Cook: Pour the egg mixture evenly over the sautéed vegetables in the skillet. Use a spatula to gently spread the mixture if needed. Cook on the stovetop for about 3-4 minutes, allowing the edges to set while the center remains slightly undercooked.

            Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata has puffed up and is set in the center. You can check for doneness by inserting a knife; it should come out clean.

              Cool & Serve: Once baked, remove the frittata from the oven and let it cool for 5 minutes. Top with the remaining fresh basil and, if desired, an extra sprinkle of Parmesan cheese.

                Slice and Enjoy: Slice the frittata into wedges and serve warm or at room temperature. It pairs beautifully with a light salad or some crusty bread.
