2 medium zucchini, spiralized into zoodles

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/4 cup fresh basil leaves, tightly packed

1/4 cup pine nuts (toasted)

1/2 cup extra-virgin olive oil

2 cloves garlic, minced

1/4 cup grated Parmesan cheese

1 tablespoon lemon juice

Salt and black pepper, to taste

Balsamic glaze (for drizzling)

Make the Pesto: In a food processor, combine fresh basil leaves, pine nuts, minced garlic, lemon juice, and a pinch of salt and pepper. Pulse until finely chopped.

    Add Olive Oil: While the food processor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Then, add the grated Parmesan cheese and pulse a few more times to incorporate. Taste and adjust seasoning if necessary.

      Prepare the Zoodles: In a large skillet over medium heat, add a drizzle of olive oil. Toss in the spiralized zucchini (zoodles) and sauté for about 2-3 minutes, just until they soften slightly but remain al dente. Remove from heat.

        Combine Ingredients: In a large mixing bowl, combine the sautéed zoodles, halved cherry tomatoes, and fresh mozzarella balls. Add in the homemade pesto and gently toss until everything is well coated.
