1 lb chicken thighs, boneless and skinless

1 large onion, halved

4-5 stalks of lemongrass, trimmed and smashed

3-4 slices of fresh ginger

4 cloves garlic, smashed

1 tsp whole coriander seeds

1 star anise

5 cups chicken broth

2 tbsp fish sauce

1 tsp sugar

6 oz rice noodles

1 cup bean sprouts

1 cup fresh basil leaves

1 cup fresh cilantro leaves

1 lime, cut into wedges

Sliced jalapeños, for garnish

Salt and pepper, to taste

Instructions
 

Prepare the Broth: In a large pot, combine the chicken thighs, halved onion, smashed lemongrass, ginger slices, garlic, coriander seeds, star anise, chicken broth, fish sauce, and sugar. Bring to a boil, then reduce the heat and simmer uncovered for about 30-40 minutes. Skim off any foam that rises to the top.

    Cook the Chicken: After simmering, remove the chicken thighs from the pot and set them aside to cool slightly. Once cool enough to handle, shred the chicken using two forks or chop it into bite-sized pieces. Return the shredded chicken to the pot.

      Prepare the Rice Noodles: While the broth is simmering, cook the rice noodles according to package instructions. Drain and rinse under cold water, then set aside.

        Build the Pho: Once the broth has finished cooking, strain the broth to remove solids. Return the clear broth to the pot and bring it to a gentle simmer. Taste and season with salt and pepper as needed.

          Assemble the Bowls: In individual bowls, place a portion of the cooked rice noodles. Ladle the hot broth with chicken over the noodles until it’s fully submerged.

            Garnish: Top each bowl with a heap of bean sprouts, fresh basil, cilantro, and sliced jalapeños. Serve with lime wedges on the side for squeezing over the dish.
