Fluffy Blueberry Oatmeal Muffins

1 cup buttermilk (or milk with 1 tablespoon of vinegar)

1/2 cup unsweetened applesauce

1/2 cup brown sugar, packed

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 large egg

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh blueberries (or frozen, if out of season)

Optional: 1/2 teaspoon cinnamon for extra flavor

Optional: 1/4 cup chopped walnuts or pecans for added crunch

Preheat Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

    Prepare Oat Mixture: In a large bowl, combine rolled oats and buttermilk. Allow it to sit for about 15 minutes, letting the oats absorb some of the buttermilk and soften.

      Mix Wet Ingredients: After the oats have soaked, add the applesauce, brown sugar, honey (or maple syrup), vanilla extract, and egg to the bowl. Whisk until everything is well combined and smooth.

        Combine Dry Ingredients: In another bowl, mix together the flour, baking powder, baking soda, salt, and optional cinnamon.

          Combine Mixtures: Gradually fold the dry ingredients into the wet oat mixture. Stir until just combined, being careful not to overmix – a few lumps are okay.

            Add Blueberries: Gently fold in the blueberries, being cautious not to break them. If you are using walnuts or pecans, fold them in as well.
