1 cup cherry tomatoes, halved

1 cup bell peppers (red, yellow, or orange), diced

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 avocado, diced

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1/2 cup BBQ sauce (spicy variant recommended)

1 teaspoon lime juice

Salt and pepper, to taste

12 small lettuce cups (Butter or Bibb lettuce work well)

Optional: Jalapeño slices for extra heat

Prepare the Veggies: In a large mixing bowl, combine the cherry tomatoes, bell peppers, corn, black beans, avocado, red onion, and cilantro.

    Make the Sauce: In a separate small bowl, mix the BBQ sauce and lime juice. Adjust the seasoning with salt and pepper as desired.
