Ingredients
  

8 oz (225g) pasta (penne or rigatoni work well)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (240ml) ricotta cheese

1 cup (100g) grated mozzarella cheese

1/2 cup (60g) grated parmesan cheese

1 cup (225g) fig jam

1 tablespoon balsamic vinegar

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain and set aside.

      Sauté Aromatics:

        In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 4-5 minutes. Add minced garlic and sauté for another minute, being careful not to burn it.

          Make the Sauce:

            Reduce the heat to low and stir in the heavy cream and ricotta cheese. Allow it to warm through (but do not boil). Stir until well combined and creamy.

              Combine Ingredients:

                Add the cooked pasta to the skillet with the cream and ricotta mixture. Then, mix in the fig jam, balsamic vinegar, thyme, half of the grated mozzarella, and half of the grated parmesan. Season to taste with salt and pepper.

                  Transfer to Baking Dish:

                    Preheat your oven to 375°F (190°C). Pour the pasta mixture into a greased 9x13 inch (23x33 cm) baking dish. Spread it out evenly.

                      Top with Cheese:

                        Sprinkle the remaining mozzarella and parmesan cheeses evenly over the top of the pasta bake.

                          Bake:

                            Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                              Garnish and Serve:

                                Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves, if desired. Serve warm and enjoy your unique Fig Jam Pasta Bake!
